A week into the healthy eating plan and I’m a couple of pounds down. This is one of the recipes I used last week. This serves two – I promise I didn’t eat them all myself!
150g plain flour
1tsp baking powder
150ml skimmed milk
1 beaten egg (free range)
handful of blueberries
smidge of coconut oil for the pan (Lucy Bee)
tsp honey to serve (local Cheshire honey)
Put the flour and baking powder in a bowl and mix in the milk and egg with a fork (or whisk if you are fussy about lumps – I’m not). Add the blueberries. I guess you could add blackberries if you’ve been foraging – I have some in my freezer from a little foray a couple of weeks ago, so maybe I’ll try them next time.
Melt some coconut oil – just enough to coat the pan. When the pan is really hot, drop a small dollop of the batter and leave it alone until you see bubbles on the surface which tells you it’s done on the other side.
Flip them over and cook for another couple of minutes then serve with a drizzle of honey. As you can see, there are no points for finesse in my kitchen.
This is not particularly low calorie, but I’m not intending to diet as such, just to eat with my health in mind. This is filling, nutritious and I know what’s in it!
