Halloumi and Aubergine Warm Salad: Eating Clean

Still eating clean, I came across a recipe in Good Housekeeping for a halloumi and aubergine warm salad.  I’ve tweaked it as I didn’t have all the ingredients, but the pic shows what went into it.DSCF1821

As usual, when I make something, the photo looks nothing like it did in the magazine, but it tasted really good.  If I make it again, I’ll leave out the pomegranate as I don’t think it added much value and I’d rather munch on the pomegranate seeds as a snack.  The red pepper wasn’t in the recipe, but needed using up and served with the aubergine, makes for a good food combination.  I added fresh parsley from the garden.
